Snack Match: Rice Krispy Treats

A snack match is an allergy-friendly snack that nutritionally and/or visually resembles a popular children's snack.

This week's snack is: Rice Krispy Treats

Snack Match substitute: Rice Chex Treats


Rice Chex Treats

1 1/2 C honey
3/4 C sugar
2 t salt
1 (12.8 oz.) box Rice Chex
rice oil

  1. Crush Rice Chex and put in large stainless steel or glass bowl.
  2. Grease a 9x12 inch (or larger) ceramic or glass rectangular baking dish. The larger the dish, the thinner your treats.
  3. In a medium sauce pan, heat honey, sugar and salt on low until melted and bubbly (~ 200 degrees).
  4. Pour sugar mixture over crushed rice chex and stir immediately to distribute sugar evenly.
  5. Pour rice chex mixture into greased pan and press down with spatula or hands, if cool enough.
  6. Allow to come to room temperature then remove from pan and cut into squares for serving.

  1. Although most understand why we don't use the butter found in most "treats", I am often asked, "Why not just use marshmallows?" Although we think of marshmallows as sugar, most are made with corn syrup and corn starch. Our angel is allergic to corn so that eliminates most pre-made foods, including marshmallows.

  3. You want to use the General Mills brand of Rice Chex. Depending on your allergies, other brands may be fine. However, I have found allergic ingredients in some so read the labels. As for the size, I have only seen the GM Rice Chex in a 12.8 oz box and will note that in the recipe. Thanks your question!
