Cucumber and Mango Salsa
1/2 English cucumber
2 fresh mango or 2 cups frozen chopped mango
1/4 red onion, finely chopped
1/4 bunch fresh cilantro, chopped
salt, to taste
- Slice the cucumber in half lengthwise and in half again lengthwise.
- Chop the cucumber into 1/4 inch pieces.
- Chop mango into 1/4 inch cubes. Place in a bowl.
- Add onion, cilantro, and the juice of 1/2 of the lime to the bowl. Toss.
- Add salt and more lime juice to taste.
- Let rest 30 minutes and serve.
